posted this on reddit a while back and rustled some jimmies. Anyway, chuck is an inferior cut for burgers.

The reason is that chuck has significant gelatin. Think about when you make beef chuck stew--plenty of gelatin. This gelatin does not cook on high heat and remains chewy and nasty.

So why do people use chuck for burgers? Because it's cheap as shit and massive, there's too much of it so you gotta use it somehow. Chuck isn't particularly good for anything, it's the jack of all trades master of none (not the best burger meat, nor stew meat, nor steak meat, but it's not the worst at any of these either)

So what is good for burgers? Cuts with LOW CONNECTIVE TISSUE and LOW MARBLING (because using marbled cuts is a waste). The best cut for this, is EYE OF ROUND. Just mix it with some outside fat and it makes a great burger.

You could also splurge a bit and get some sirloin/top round. These are all great low-gelatin cuts.

I buy literally the cheapest cut of ground beef from Publix and it makes delicious "smash" burgers.

Sirloin is significantly better than the meme that is a filet mignon, which is why sirloins aren't generally marinated (unlike cheap cuts like round) and why filet mignon is typically kept in tact with the T-Bone to be paired with the strip. And when it is prepared separately, filets are typically overseasoned, or wrapped in bacon, because the beef flavor is practically nonexistent and needs some sort of flavor to compliment MUH TENDERNESS

The only time a filet mignon is worth eating is when it is kept on the bone and cooked with a strip so it can "share'" the fond. When it's kept on the bone and cooked with the strip, yeah, it can be pretty good. But tenderloins are a fucking joke and I have no idea how any there's a market for it, other than retards like you who eat it for MUH TENDERNESS. Sirloin, and hell, even round, have a way better flavor.
