What I remember as chinese food growing up as a young kid in Hong Kong

>turtle/shark fin soup
>fried chicken feet
>pig uterus noodles
>fried rice with pork knuckle gristle
>unidentifed fish balls on a stick
>boiled dog meat
>one time, monkey brains

Americans have no idea how bad it really is. No one in china knows what the fuck beef and broccoli is or sweet and sour pork. Chinese food is disgusting. Literally the worst parts to eat of any animal. Makes sense because chinks are the race of humans closest to animals. They make disgusting noises when they eat, slurp everything, men in the streets lift their fucking wife beaters over their sweaty stomachs while laughing and chewing with their mouths full of food. Like what kind of idiot decided 2 sticks is the most practical way to eat grains of fucking rice. Starving Nigerians who eat grass have a better diet than the average chinese.

Theres a few good YouTube channels. I watch Chinese cooking demystified. Also dont be afraid to just ask your local Chinese places for their authentic menu. Most of the family run ones will have one. Just use google translate if it's all in chinese.

Theyre called lions mane mushrooms. I actually picked them in the forest next to my house this winter and cooked them up a few ways.

First off, they are very plain, but meaty. They will soak up any liquid they are cooked in and taste like it, similar to tofu. I liked them the most grilled with butter cut into bit slices as a side.

I mean if you really want to know? Most of what you think of as Chinese food originates from a specific region: Guangdong. So as far as Cantonese Chinese food goes:

>Pretty much any roasted meat from a place that hangs their ducks will be good. Pic related, char siu pork.
>Decide what you want to get from Dim Sum restaurants before you're seated, otherwise they will flood you with items and rack up your bill.
>Thousand year eggs just taste like boiled eggs with a bit of funk to them.
>Lup cheong is a dried meat sausage that can be added to anything and make it better.
>Chow fun is kinda rare on a lot of menus, but if you like noodles, they're a really good one if the place knows how to make it.
>Jellyfish is surprisingly good, it's kinda like eating seasoned seafood noodles.

I wish I could elaborate more on Seafood, but I live inland now, so I can't find good places to try a lot of it.

Well, the first step is to realise Chinese food varies so much by region that it basically might as well not be called "Chinese" food. It's like saying "western" food (which is a term in China) when that runs the gamut from British to Greek to Cajun. In fact, Chinese food varies so much that people in Shanghai will have exotic restaurants serving...food from other parts of China.

I recommend going to a Sichuan restaurant and a Hunan restaurant. They won't be truly authentic, but unless you grew up suckling on chillies as a baby you're not gonna want it "truly authentic". I don't know what Chink restaurants are like in the US but in the UK you can find mostly authentic restaurants in Chinatowns.

there are lots of northern Chinese places near where I am that serve bomb ass food. I used to get a hand pulled noodle in chopped pork gravy that was killer at this northern noodle shop. The other northern chinese place I frequent has crazy good dumplings and tian jian stirfried pancake. At this point the waiters know me and tell me whats good that day, but when I first came in they were like oh no you eat-a the sesame chicken very good very tasty. Weird that you have to build trust with some folks before theyre like dude the bitter melon and jellyfish in vinegar is good as fuck today dig in
