Can anyone explain the difference between Mexican food in Texas, California, Arizona and New Mexico? Which one is best?

Also I hear Chicago has a big Mexican food scene, what's it like up there and how does it compare?

I'll wager that op picture is from Texas, because I live there and eat lots of Mexican food and that looks exactly like something that would come from a regular run of the mill Mexican restaurant. I've been to Mexican restaurants in other states and it's never the same, they always do something weird or fuck something up, but I can't quite put my finger on how it's different.

You can find mexican restaurants with big plates of food covered in sauce and cheese pretty much anywhere in the states. Quality will generally be better the closer you get to the border.

I can't speak to the other states, but I think in california there's more of an emphesis on highlighting local ingredients. Avocado/guacamole with everything. Lots of seafood- ceviche, fish tacos, etc. if you know where to go.

Every city has specialties as well. San Diego has the California Burrito, SF the Mission Burrito, LA just has a shit-ton of taco trucks.

I noticed in California it was more seafood & avocado/ fresh produce. New mexico had a bunch of green sauces, white cheese & hatch chili. In Arizona I noticed more blue corn tortillas, as well as black beans & corn mixed up with stuff. In Texas a lot of plates are totally covered in gravy and yellow cheese just like op's picture, also random stack of lettuce and tomato. We love beef fajitas and chili con queso 2

Southern California Mexican overloads everything with guacamole and, logically, has tons of fish involved. Northern California Mexican is like that, but with rice in their burritos. Arizona/Sonoran Mexican is a lot smokier, and involves bacon and dried meats more often. If you're in Arizona, try a Sonoran hot dog.

Calfornia has the best Mexican since it's closer to one of the best food regions in Mexico and it has a bit of everything when it comes to Mexican food. Chicago is second best and they might have the least amount of Mexican-American restaurants but they lack the seafood and tacos Los Angeles has. They do have the best upscale Mexican. Texas would be third I guess. They have good authentic Mexican places but the majority is Mexican-American(which is good but lacks variety). The rest are irrelevant. New york is pretty underrated.
