Chicken and dumpings. The chicken is breaded and baked in the oven with Shake n Bake. The dumplings are made in a stockpot with cream of chicken soup, broth, other flavorings, and big bisquik biscuits. Oh god, this shit was like 3 - 4 times a month for like ten years. Mom probably found this bullshit in some very common cookbook or magazine in the 60s, and thought it was cheap, easy, and nutritious, and latched onto this. Canned tuna, macaroni, canned peas, and I think a can cream of mushroom soup. Topped with crushed chips. It was SO fucking awful, which I voiced loudly for a decade, but the lazy bitch just kept making it anyway.
The meals I did like were hamburger helper, and shake and bake chicken or pork chops, with mac and cheese. The Americanized McCormick packet ground beef taco night with the hard shells, cheap pre-shredded cheese, lettuce and tomato and that's about it was also good.
We never had any food that took longer than 30 minutes to make. Everything was processed, convenience, from a box or can. I swear she had fewer that ten unique meals that would rotate again and again through my entire childhood.

Either this slow cooked chicken she makes for burritos, pulled pork for nice sammiches, this one breaded chicken thing she makes that’s always moist and juicy, pan-cooked steaks that are always perfect medium-rare, or her green-bean casseroles that are fucking delicious.

I fucking love my mom and she’s had her fair share of fuck ups and made things that I absolutely hated, but overall she was always a good cook and typically made things that were enjoyable. Corn casserole, had this at Christmas and loved it. Wish I had known about it sooner, its easy enough for any moron to throw together in 5 minutes.
Ingredients:
1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended: Jiffy)
1 cup sour cream
1/2 stick butter, melted
1 to 1 1/2 cups shredded Cheddar
Preheat oven to 350 degrees F. In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.
