Black olives are salt cured and dyed with ferrous gluconate.
Green olives are pickled with vinegar.
You can absolutely get green olives cured without vinegar. They taste nearly identical to (good) black ones.

Black olive ripeness is always a gamble because of lazy food labeling laws. It's super rare to get a truly ripe can. People who hate them only remember the unripe ones or never had ripe olives in the first place.
Without vinegar to cover it up, without any ripened or added sweetness, the weird off-flavors are right in your face. Unripe olives suck ass no matter the color or preparation.

Fully ripe salt-brined greens are amazing. Tender, sweet and salty, no acid covering up the subtle buttery flavors, no funky smells.
