Medium high heat. Heat olive oil or butter. Drop egg in pan. Let it sit a little bit, add some salt and spices. Lower the heat to medium. Then use the excess olive oil or butter to baste the egg so the whites on the top get cooked, and the yolk gets creamy and custardy.

In future, you can baste it with the oil. It’ll cook the top and set the white but still keep the yolk soft and creamy. Looks great, anyway.
