fruit (such as mango, or citrus), vegetables (onion, garlic, carrots, etc.), and spices (a pinch of cumin, black pepper, cinnamon, etc.) as desired.

My go to is a flat of habaneros, the juice of half a lime, a tablepoon or so of salt, and vinegar (say 8oz if you're doing a 12oz bottle), a clove of garlic, and a little bit of cornstarch water. Blend until smooth, bottle.

For a more abrasively peppery/less citrusy flavour, use some green thai chillies, mirasols, fresh de arbols, red jalapenos, rocotos, and/or mirasols. For earthier or smokier flavours, go for dried or smoked peppers like anchos, guajillos or chipotles - just warm up your vinegar and soak or simmer them for half an hour or so before blending. Earthier flavours work best with a bit of sweetness. So something guajillo/ancho heavy will probably work great with orange juice, and a pinch of cinnamon.
