Why do you want a kitchen job? You will be forced to endlessly cook the things you are told to cook for people you will never see enjoying it. It would be low pay, likely dead-end, and thankless. Get a trade. Earn a good living with a secure career and you will be able to afford to cook whatever you want for yourself in your free time. That's me. I already work in a "fast casual" restaurant on oven, but want to work in a more traditional kitchen however all of my applications get ignored. I hate my current job.

I admit I'm too stupid for school and the wagie life calls for me. I just want to be like my older friend who managed to become a chef by age 25 despite never having any kind of degree, but I doubt I'll get there at this rate.

Trade schools don’t make you sit at a desk for 7 hours studying 35 different topics that only 40% are even remotely related to your chosen degree, a degree that would likely be more useful to wipe your ass with it than it will to get you a job. Trade schools teach you how to do shit. It is a lot more hands-on, and when you do book learning, it’s actually related to the practical exercises you do so you will understand and relate to it, and have an easier time concentrating. Electrician, carpenter, roofer, plumber, doing house siding, cabinetmaking. Don’t think about what you think you will like best. Figure out what you will be best at, and do that, because if you’re good, your skills will be in high demand. You will feel good about yourself for being good at what you do, and have the financial freedom to do as you please, and a comfortable retirement. You might even be good enough to be able to choose where you live and know there will be work for you rather than having to chase a job, which is also something you have to do. Don’t plant roots around family and friends. They won’t help you succeed in life. You follow the opportunities you find in life. Nothing is going to fall in your lap. You might need to search far and wide before you find it, but the only thing that will ever stop you is giving up. There’s a lot of jobs out there no one is learning. Find out what is in demand. Don’t try to stand out in a crowd. You already know you aren’t the shining star.

I’m a construction surveyor. There’s one of me for every 10 carpenters, every 10 rod busters, The painters and hydrovac operators and concrete guys. The numerous equipment operators. Laborers running around like ants. Fuck those guys. But I went to school for 4 fucking years so I can make about the same or less than any skilled trade, and the unskilled workers still make about 75% of what I make. They are always short guys on their crews, can’t find enough to hire. I’m lucky if they need me there 5 days a week while they work 2 week shifts. Who do you think got the bum deal?

I'm in a trade school, and yeah, it's a blast. No homework, one class at a time accelerated courses, all we learn is related, 50% is hands on, the cert program is only 11 months, and when I'm out I'll be making 70k starting and soon 6 figs once I've specialized and gotten my Lvl 2.
