I bought some tinned mole sauce, but as far as the ingredients are concerned it is kind of bland. What do you recommend adding to it? I tried a bit of chocolate in my attempt to make enchiladas in mole sauce, but I still was not happy with the result. I am thinking dark chocolate, clove, and cinnamon, and also is the store bought general mole sauce typically what is used for mole chicken etc? I imagine it is more of a base in which to add other ingredients.

Very few make their own moles, I have made a few using a metate but with help. Most simply buy pre-made paste and modify-it to their tastes. I recommend a brand called Mayordomo, they are from Oaxaca and they are very solid, I usually add tomato paste and table chocolate to mine, alongside stock. It is already very salty to it is acidity and sweetness what you must pay the most attention to

What chili? Mexico has over a thousand varieties of chilies. Unlike what most people think of chilies the main reason they are used in Mexican cuisine is flavor and “umami”, heat is most of the time a bonus as very few chilies are used only for heat.
While you are at it don’t use asian chilies, they are spicier but lack flavour when compared to Mexican chilies

Do not use powders, they are useless trash. Buy the whole dry chili, clean it, toast it and soak in water, then you can blend it.
>cocoa
Use table chocolate, not cocoa powder, even a chocolate bar would work better. The time I made mole I used a chocolate that I myself made with cacao beans, almonds, cinnamon and sugar.

My recipe for Poblano mole is
120g ancho chili
60g chipotle
100g mulato
100g burned chili seeds
20g garlic
200g tomato
Chicken stock
5g anise seeds
5g cinnamon
1g cloves
1g black pepper
12g toasted sesame
10g raisins
30g fried peanuts
30g fried almonds
15g toasted pumpkin seeds
10g stale tortilla
1/2p stale bolillo
100g fried macho banana
1/2p table chocolate
45g pig lard to fry what you need to

It is a lot of ingredients, but that’s baroque cuisine
