It very much hinges on both how the food is canned and how it's stored. Dried meat and fruits, most anything low in water content, and anything free of milk or creamer content easily has the potential to stay edible for decades if the can it's packed into is kept away from high temperatures and the can isn't ruptured (and if the contents are canned properly). This is why the foods that most always end up being edible in the WWII- and Vietnam-era rations tend to be things like crackers, candy, breath mints, and spray-dried coffee, rather than meatloaf, spaghetti (especially this, because the acid in the tomato sauce eats through the can lining), or cans of fruit. And considering that the pemmican he ate in this ration is essentially just dried meat and cereal, there wasn't really much to make the contents go bad except for exposure to high heat or a rupture. The fact that it was stored for over a century without facing either is an unbelievable feat.
The meat that guy ate was probably stored in the fridge or something, and refrigeration doesn't really preserve anything for very long, let alone meat. But non-dried meat in general does not preserve for very long, and that's precisely why Steve hasn't eaten any older than the (highly processed) 30 year-old sausages in one of those videos on the early MREs.
