First of all, let me preface this with the fact that I think Gordon is a fucking meme and a wanker. Just a corporate climber who wanted to get big by any means necessary and learned to only look out for himself because of his dead beat father. He's mellowed out now that he has kids and a family and shit, but when he was at the top of his game or trying to get there, he was an absolute cunt.

That out of the way, there are differing levels of expectation at work here. When Gordon is at a 'fancy restaurant', he is presumably there for one of his meme shows. Shitting all over the place is actually his job, and if you watch the old bong version vs the burger version, you know the burger version gets edited aggressively. Compare this to his travelling shows, where he is a GUEST in someone elses kitchen, and he's trying to learn from them. Now, as a guest, he has to be gracious. He can't just come in and call them all filthy fucking shit fingered coolies. Not only would it be bad TV, it's rude.

Compare also, the level of expectation with a "Michelin star restaurant" vs a indian streetside vendor. Michellien experiences above 2 stars are top end, run like brutal military exercises, everything has to be anally precise and just so to justify those stars. Comparatively, there is much lower expectation for an indian diner. As long as everything is clean and running smoothly, it's fucking great.

Pretty much that. They're different settings and so are the expectations. You'll also notice he acts differently in Masterchef compared to Hell's Kitchen. Since his first TV show, whenever that was, he's not been just a chef and cook, but also an entertainer, and so he acts differently depending on what kind of show it is.
He's definitely a troll and does a lot of things for the memes, but I think he's more often than not honest about what he's using to troll.

There are different standards for a 5 star chef cooked meal and some taco off the street.
You can bite into some good ass taco and say "Damn that's really tasty" and at the same time be really critical of food that is being served to you in a 5 star restaurant.

It's not about the food being "good" that should obviously be a given, it's about it being up to par.

You miss the overall point of both experiences though. It's all about shitting on the normal people who will
a. never be able to afford a Michelin dinner
b. never be able to afford a tasting adventure in India

It's all fake anyway, normal indian food is street food and it's interesting for the exoticism but after a while it's about as exciting as eating an authentic shepherds pie. He is just rubbing it in people's faces that he gets to eat this stuff and overplaying how amazing it is compared to what we have to eat on a daily basis. The underlying theme is that we are somehow missing out big time on this incredible food. I would argue that is somewhat true and the West has lost a lot of it's authenticity, but yeah, isn't most of that due to the over schooled and egotistical chefs like Ramsey? I mean that super chef culture has destroyed the hearty western meal, and it's almost like he is just doing a victory lap by traveling to India and eating a nice 2 dollar street meal then lamenting it doesn't exist anymore in the UK.
