What's up with these sushi chefs?

They literally dedicate their lives to making rolls of fish and rice. It's not rocket science. And then they get admired for some reason. Why don't burrito chefs get the same respect? They roll up chicken with rice and tortillas.

Tortillas also need to be perfectly laid out. Too much filling will cause them to explode. It's not as precise but mostly the same concept. These guys roll up rice, fish, in seaweed. What's the big deal?

Japanese chef training is retarded.

You mean you need to be an asshole chef's assistant for 5 years before you're even considered to be capable?

You spend 7 years of training knife skills you could hone in a year if properly trained, instead of "watch this, student. This is 33 years of cutting sakana." Learning to make washoku dishes does not need 10 years worth of tuttelage autism.

The east puts too much emphasis on how long have you been repeating one thing, instead of actually knowing/teaching how to do it.

Fucking this. It is not. But sushi was elevated to a whole luxury and delicacy status, so anything related to it can be seen as refined. It is all a huge marketing ploy that worked. Japan has always been a "play your roll in society and play it well" kind of environment. Especially after the war. If you're going to be a pokemon master - you gotta be the BEST. You wanna play piano? Prepare to make your fingers bleed until you win a championship. You wanna make sushi? You're going to dedicate yourself to the art of it and take it as seriously as the sushi-masters before you.
