I spent a month traveling around Spain and I was surprised at how great the food was. Rarely ever hear anybody mention Spanish food but damn, it was fucking good. I would love to head to an old bar/tavern in Southern Spain and have some fried sardines, a glass of sherry and some olives right now. Or alternatively I could be in the Basque country eating pinxtos and drinking wine with some friends.

Also salmorejo is one of the best fucking cold soups there is. Spanish wine and cheese are underrated and good jamon is just as good as prosciutto. Seafood in the southand the basque is super high quality. The olive oil is abundant and high quality. And though tapas are a bit of a meme, they were actually great too.

Since then a Spanish restaurant opened in my city and it is regulalrly one of highest rated and most popular. Spanish food is good.

The thing is that you can find that bastardization of Italian food all over the world (particularly the "West" aka Europe, the Americas, ANZAC) with relative ease. Spanish-style food is considerably harder to find in most of the "West" that's not in some way related to Spain. I love it to bits, I'd give my liver for some jamon serrano, but it isn't nearly as easy to do something that vaguely qualifies as it for the average shmuck.

I think French food is definitely a lot richer than Spanish food, very savoury, heavy flavors, all that. I prefer Spanish food to Italian food overall. That said, I do enjoy English food, so for all intents and purposes I am some kind of nutjob.

I'd say that Philippine/LatAm food is something unto its own. It is influenced directly by Spanish food, don't get me wrong. But it isn't like the "bastardized" Italian food that you can fight pretty much anywhere (like spagbol, because bolognese is from Emilia-Romagna and spaghetti is from Naples, with huge socioeconomical differences between the two, like the fact that ragu alla bolognese is way too rich for Neapolitan food as well as calling for tagliatelle most of the time, which is mostly eggs and flour, while spaghetti is mostly water and flour and generally would be served like ragu alla napoletana, which doesn't use finely diced meat - instead going for slices - nor carrots, milk or white wine and calls for way more onion).

I think Italian-American cuisine is more like meatball subs or just subs in general, that's something that starts in the Italian community in America (so, I suppose spagbol does count, but no one tries to pass spagbol as being Italian-American). Comparatively, I look at, say, LatAm food (which is where I'm from), and I notice that not only is the food informed by the local cultures and local ingredients, as well as Spanish food (a lot of Latin American food is just a local take on Spanish food), but there's also the influence from different immigrants. Asado contains Spanish ingredients (such as morcilla), but it isn't prepared in any Spanish-style ways. Locro isn't found anywhere in Spain. They're two different cuisines, even if they are directly connected by heritage.

Italian american food was influenced by locally available canned tomatoes that were hugely popular in the first wave of italian immigration to the US just like how cuban paella uses achiote instead of saffron because saffrno doesn't grow in the caribbean, or latam bacalao vizcaina uses tomatoes instead of pimiento rojo because who the fuck even knows why.

I'm from the south part of Brazil, work as demi chef in an Italian Restaurant in Tuscany and Spanish cuisine is one that hugely impacted our cuisine in the region. More than France or any other. The thing is that Spain is an underdog, it shaped international cuisine but in such a subtle way that no one knows the impact unless they dig about the subject, sadly.

Also that is the birthplace of the Adria family. I dream to one day work as a cook there, someone can give me some tips?

I've dated a chick that lived in Rio de Janeiro and been on that shithole more times than I can count. It is funny, because I felt safe there, the thieves are scared to death of robbing you there, cuz they will be burned alive by the drug dealers if they get caught, the drug dealers walk around with guns and don't fuck with you if you are not acting weird. The only thing that I hate is the mess and the heat that the whole city is, been to every major beach and place on there and never got mugged or bullied (I'm dark blonde hair with blue eyes).
