Is bear closer to pork or to beef?

It's very much like pork. Bears harvested late in the season are extremely greasy and fatty. Best bear is spring bear that's been eating a lot of berries (not salmon).

>Bears harvested late in the season
I love the euphemism "harvested" as if the bears are out there in little rows, waiting for the combine to come by and sweep them up.

I harvested 10 crappies today.
Born, raised, and harvested in the US.
The deer harvest in Minnesota this year was XXXX deer.

Stupid phrasing.

>>13729392
In the US the term "harvested" makes sense since hunting and fishing are tightly controlled based on area population studies, so in a way it's similar to managed agriculture

I'd wager that bear is probably more similar to wild pork because they are both omnivorous, whereas cattle are herbivorous.

I've heard bear tastes awful and you have to prep it in a specific way for it to palatable.

Probably because of their diet walking around eating dead animals and fish majority of the year.

It does not taste awful, most of the people who repeat this stupid meme are not hunters and have never tasted it in their life. Bear meat was regarded as a delicacy on the frontier. The flavor does vary depending on whether you're eating a bear that's been eating carrion and fish all year, or if you get a black bear in the spring who's just been eating berries and nuts and shit. But in either case, it isn't bad.

Hunter here, Bear meat is awful. If I ever shoot one it will only be for a Bearskin rug.

You can make a bear roast and it could be quite similar to beef. I mean, you can certainly tell it's not, but nothing like pork.
Typically, the fat on bear give it a pretty gamey or just nasty flavor. Having had bear and raccoon with too much fat on them, it definitely makes a difference.

You can't even compare it. Maybe texturaly it's closer to pork, but you have to try it to really get it.

It's greasy, but fuck me if it isn't delicious. Bear sausage is one of life's great gifts. Get it in ya

While you're at it, get some moose, arctic caribou (less "gamey" than normal deer), and some partridge. Comfiest food out there, my friend

There really is a lot of shitposting in this thread. First of all, in relation to grizzly bears (as in OP image), coastal Alaskan grizzlies do NOT eat berries in the spring. This is just pure nonsense, and especially given berries are produced by plants in the autumn. In fact, grizzlies in the spring (costal Alaskan) subsist on mainly sedge grasses in the meadowlands close to the coast.

If the obvious liar who posted earlier said this, I might be inclined to believe he’s eaten “bear meat” (grizzly specifically) but I find it very hard to believe the US authorities would issue hunting permits for these animals at this time of year - mainly because most are in reserves, and also because it’s probably the most important part of the year in their reproductive cycle.

I’m unfamiliar with black bears generally but the same rule would be true - no berries in the spring, and they’ll again be largely foraging for new spring growth and/or carrion. They definitely won’t be eating berries, either.

Just want to clear that up.
