Okie anon reporting in. Weather was nice this weekend so I smoked me some ribs; served with fried okra, mac n cheese, a baked potato, and of course an ice cold Dr. Pepper. Sauce was a little spicer than I usually do it. Made too much of everything so I gave a plate to the old Asian widow who lives in the unit next to mine.

Britbong here. I'm getting super interested in southern american food, and have been considering buying a cookbook on gumbo and southern stews.
What recommendations do you have in general for me to try? Anything and everything is fine though I definitely prefer meat and fish over greens. Flavour profile (sweet, salty, etc) I'm fine to experiment and try anything recommended.

The best food the south has to offer comes out of New Orleans. Anything and everything they are known for is good. Lots of fish, lots of spice.
As a TNfag i'd go on about pulled pork and ribs but i'm not sure you can emulate that properly in bongistan.

I've had some pretty good pulled pork - from, you've probably guessed, American BBQ style places - and it I honestly have loved it since. Ribs were way more tender than I expected too. Having smokers and stuff at our own homes isn't really a thing here so it kinda becomes a rare and pricey treat rather than just picking up a pack of ribs from the butcher for a meal. What do you feel about ribs done in an oven? Or pulled pork in a crock pot/slow cooker?

Oven ribs can be pretty damn good. Just gotta get the spice rub right. I usually do salt, brown sugar, paprika, garlic powder, mustard powder, and black pepper. Spoked paprika and some liquid smoke help amp up the smokiness, and you can kiss 'em on the grill after to up it further.
Personally, I don't like slow-cooker pulled pork. Slow cookers tend to be too hot and the pork gets kinda dry. If you can, sous vide pulled pork can work really well. You also get the juice from the pork to render into a glaze. They have some oven smokers that can work in a pinch as well.
If you're in bongland you should be able to pick up some good pork mince and turn that into sausage, and then into gravy to go along with biscuits. Southern biscuits are pretty easy, just need prepwork. Freeze your butter and grate it in instead of trying to work in cold cubes. You can make pretty good cheater biscuits with self-rising flour, salt, and cream. Not 100% but really simple.

I made sausage gravy a couple of weeks ago, even made a thread about it on here too (though after getting some help for tips the thread just devolved into an odd argument about whether sausage gravy should be called gravy, but I'm not sure why I didn't expect it to go to shit somehow) and it turned out pretty decent, though milkier in taste than expected. Definitely need to add more pepper next time. I haven't tried my hand at biscuits yet, but next time I do sausage gravy, I definitely plan on making some, hopefully get a more authentic experience.

Trick to good sausage gravy is to really cook the roux in with the sausage. Start in a cold pan to really render out the pork fat, then just when the sausage starts to brown add in your flour, and keep it going for at least a couple minutes. Then add your milk. And black pepper is definitely important.

i had cheerwine for the first time a few days ago and it was great, had my second a few hours ago and finally nailed down what it reminded me of.

it's like a better version of root beer, not as strong initially and with a much more enjoyable aftertaste.
