Lots of tools make sense if you make a certain thing often. Pizza joints have to cut hundreds of pizzas per day with quick service while some people don't make pizza anywhere near often enough to bother with a pizza cutter. You would know your needs best. As for knives, I'm really happy with my Mercer ones.

I bought 6 dollar knife that was 8CR13MOV which is basically VG10 steel. I sharpen it on stones, or a machine or with 400 grit wet dry sandpaper and polish it. Sharper than hell. People who buy expensive knives and don't know how to maintain them are worthless human beings.

Difference is you need to use a knife significantly more than any unitasker. Also you don't need anywhere near a $200-$300 knife because a cheaper one you know how to hone, sharpen and maintain will do just fine.

these are requirements and may as well get something good, even good steel pocket knives cost upwards 150$

I would argue passed this, get bargain utensils till you see a clear constant need for it, which is why I would be ok paying a few hundred for a cleaver once my finally gives up/I can justify the cost. a bit better.

I use a boning knife, too, but didn't get one until very recently. I try not to get anything I don't need even when it's inexpensive, because useless shit just clutters up the kitchen. My forged Mercer is good enough for what I need at my skill level, and I like it better than the Mac knife I bought. So unless someone has a good reason for a knife that costs over $150, I wouldn't recommend it. They should just start out with Victorinox and learn how to even use and care for it. I did just finally get All-clad pots and pans, and they're a huge step up from my Cuisinart ones. It's 100% worth getting at least one fry pan or sauté pan at used or factory seconds discount, and I wish I'd done it sooner. My Cuisinart set was $50 total though, so it seemed ridiculous to buy just one pan for more than that.
