tried it a couple days ago. it tasted good, and using the fat for the potatoes instead of butter was a very good idea. don't even need gravy to make them taste like pot roast.

however, pot roast is exactly what i'm reminded of with the beef ribs. same consistency and taste when cooked for 8+ hours. the difference? $20 for about 3 lbs of beef ribs. could have got twice the amount of chuck shoulder for that price. i see literally no reason to use beef ribs over some very large chunks of chuck shoulder.

It's like a normal souffle, puffed egg whites folded into a batter, then pan fried at a low temperature
If the batter was too runney it will flatten out, if its too thick it will probably collapse
Trying to flip them can be a goddamn pain if your consistency isn't right, or it could end up flattening if you slam it back into the pan too hard
