Mix everything in the pot after pouring out the water instead of straining so there is a little pasta water in your sauce and the milk and butter don't make it get cold. Don't use as much milk as the box says, just a splash then add more butter instead. A pinch of salt and a heavy shake of black pepper. If you have a hotdog cut that shit up and throw it in. Also, extra actual cheese never killed anyone that I've met.

Add a pinch of mustard powder or a little bit of Dijon mustard. It’s subtle but it helps balance the heaviness of the fat in the cheese/butter/milk, especially if you add additional cheese.

Dead wrong.

But instead of butter, use lard or bacon grease for porky goodness. Also add a teensy bit of Dijon and/or Louisiana style hot sauce. Helps lighten the whole dealy. I call it Spicy But Not Too Spicy Just Enticeroni and Cheese.
