I eat meat but plenty of studies have shown that stress generally makes for worse tasting meat. Dunno if it's different with fish but with cows and stuff stress causes them to use up the glycogen in their muscles which turns to lactic acid and it makes the meat have a worse texture and flavor. There's no good reason to not dispatch the animal as quickly as you can before you start butchering it.

Him killing it or not doesn't make a difference to the taste, and glycogen doesn't get consumed that fast. In fact even if you did a blade to the brain it would still be wriggling around when served, just a bit less. It's mostly done for aesthetic effect because we don't live in a pathologically altrustic cucked culture.

I don't think there is a western equivalent of this type of cruel, culinary showmanship; the closest thing I can think of is sauteing snails and placing them back in their shells.
