Slightly drunk dinner. Left over white rice, salsa and guac with some canned mushrooms and ikea meatballs and gravy.

It's definitely not gourmet, but it took half hour total including over heat up and it's what I needed.

I roasted a whole butterflied chicken seasoned with salt, pepper, rosemary, sage, thyme, garlic, paprika, a pinch of accent, and 1/8 teaspoon of baking powder to improve browning (all of those were dried herbs). After letting it rest, I carved it into thigh quarters, breasts, tenderloins, and wings (reserving the bare carcass for stock).
Of that, I had a breast with half a box of quartered white mushrooms tossed with oil, salt, pepper, and garlic that was also roasted. Beverage was a Crispin hard cider.

If you want to start cooking something with cheese on top and avoid burning, tent the baking dish with aluminum foil. That's my go-to for baked ziti, all I do to ensure the cheese on top browns a little is pull the foil off for the last quarter to third of the baking time.
