and chicken breast is a staple in my diet. It's only edible with a sauce. Then it just becomes a vehicle for that sauce. I've done chicken thighs but, if I'm going to do thighs, I want the skin and the skin is not good reheated. Cooking shit every day defeats the entire point of prepping to begin with so I'm sticking to breast until I stop being a fatass.

I agree that thigh is best, but breast is also super good if you know what you're doing.

I spatchcocked a chicken yesterday, Melted some butter and let it sit on low low heat with garlic, rosemary, thyme, sage and onion for a bit, then let the butter cool.

Then I separated the chicken from the skin and put the butter mixture under the skin, dabbed the surface of the skin dry, salted the surface and left it in the fridge for a day.

Then I oven roasted it low and slow.

The breast, all the way to the bone tasted like sage and onion, it was delicious, and the skin was super crispy.

My mom and brother cleared the whole bird. Felt super happy about that.

It's nice that they liked it.

... I just wish my mother would eat anything I cook without wrinkling her nose the whole time and refusing to say she likes it just because she didn't cook it..m
