Snails are very neutral when it comes to taste (texture is another story and wholy dependent on how they are prepared/cooked) so they taste like the sour wheat they are boiled with plus hints of tomato and the fresh lemon squashed when serving plus the occasional crumbs of salty cheese like feta to balance the acidity. The wheat is dried durring the fermentation process so the sourness is subtle and not punching you in the face, imagine a thick sourish wheat soup, I know it looks like shit with snails but it is quite tasty and hearty made for a cold winter day. As for the snails plater my favourite is buburistoi (lightly fried in their shells with a touch of red wine vinegar and shitloads of rosmary with only the lower part touching the pan).
