>> No.13667812

I hate the word seasoning. Obviously when you make a dish, it will be seasoned. You will add salt as you cook, and probably some herbs and spices as well. But that's just cooking. You can't separate the process of cooking from the process of seasoning. That is, unless you make incomplete dishes and attempt to salvage them by seasoning after the fact. Which is exactly what most people who talk about "seasoning" do.

If you're baking plain boneless skinless chicken breasts, or staring down a bowl of plain rice with no accompaniment, you already messed up. At that point, no amount of hot sauce or garlic salt or seasoning blends can redeem you. Just eat your lazy food (we all do it sometimes), but stop pretending seasoning is a legitimate practice.

like, even if you're lazy, it costs 0 effort just to give it a brine beforehand for a couple hours for that edge in flavoring/decarbing it slightly

only bad cooks don't season their food. Is it that difficult to add at least pepper? I would understand wanting less salt, but no flavor at all? why?

I've been trying to ease up on the salt lately since I used to consume far too much of it.

My mother does this. She doesn't season anything she cooks. Then she eats what I cook and recently I've made a few new recipes, she says that it's the greatest thing she's ever eaten!

It's not that difficult and she has salt and pepper as well as a cabinet filled with spices. She uses spices here and there but stays away from the salt to season the food, yet she buys salt regularly since I keep using it when I'm eating with or cooking for them in their home.

Nah. I've taken to experimenting with herbs and spices in every dish I make. Tarragon is a solid choice for nearly anything. Cayenne pepper makes a lot of pasta much nicer, even my fried ramen. Parsley, sage, rosemary, and thyme is an excellent combination on pork.

I never salt my steaks because I'm a poorfag, and when I eat expensive steaks, I want to TASTE the beef, without any of the salt or pepper to get in the way of the experience.

If I were richer and could afford to eat steaks everyday, I would use things like salt, pepper, butter, garlic, and herbs. Actually, I would just hire some latina maid to do it for me. Shit would be based.

Depends on the food. The flavor of good ground beef is exactly what I want to taste, masking it with some shitty spices and herbs is sacrilege and I’ll die on this hill. Literally the only reason to season it would be to cover up bad meat. Also keep in mind most people’s paletes are ruined by all the artificial and natural flavorings they eat so they literally can’t taste subtle flavors.

Salt doesn't add taste. It reveals the taste of food. If you don't put it on the food you can't taste the food.

This is really low IQ. Salt increase the taste of beef, it doesn't replace it. I hate people that don't understand that, this is basic cooking. I know a lot of pretentious hipsters says they don't add salt to get the real taste of food, this is just stupid... Salted food IS the real taste of food.

I agree with this. I freeze leftover poultry carcasses to remake into stock. After the stock is done, it's barely more flavorful than water. I have to separate a small portion of it so that I may salt it and taste if it needs to be reduced more. It's too hard to tell if it's "right" before salt, and you don't want to salt the whole stock, hence the small portion to test.

Uniformity means it's all diluted. Sprinkling on top means you get stronger hit of flavor with less, particularly important with salt.

>Obviously when you make a dish, it will be seasoned. You will add salt as you cook, and probably some herbs and spices as well.
You would think this is obvious but it isn't necessarily. Too many people out there will cook a roast without herbs, or just basically a bucket of browned mince or meatloaf, or a plain white chicken breast, or just mushy boiled veg. I am glad you're not an idiot, but don't assume everyone else has their own head screwed on.

>> No.13678512

That sounds like a good move if you're using salt flakes, or if you want to reduce your sodium intake. I get that. But to maximize flavor in most dishes I think it's important to add salt during the cooking process, sometimes at multiple different stages of it, no?

Although that's just about salt. Nothing you can say will convince me that people who shake dried herbs on top of their cooked pizza slices aren't philistines.

Who adds salt to potatoes? Potatoes are supposed to taste almost sweet. Or that's the way I like them. If they taste watery, you have to let the boiled potatoes dry before you eat them.
