First sear it in a pan. High heat because all you care about is the sear on the outside.
Move meat to slowcooker.
Deglaze pan with a dark beer or a red wine.
Pour deglazing liquid over meat in slow cooker.
Add carrots, onions, celery, salt, pepper.
Put on lid, turn it on "low" and come back in like 5 hours.

For 3-4 pounds of meat, more than a 3" cube of meat in your meat thermometer will add excess water to the cooking water. As a result, this is a good time to thicken the cooking water before cooking. To do this, use the same method you would for cheese sauce when making mozzarella. Simply drain 1-2" of the cooking water and place the cooked meat in the drained cooking water. Cook at high heat until the meat is fully cooked.

To add 1-2" of more liquid, simply cook the meat until it is fully cooked and absorbd with the cooking water. Add the remaining water 1" at a time and cook until thoroughly absorbed.

Don’t listen to the retards man.Most folk here now aren’t interested in actual cooking and would rather post weeb hipster food images.
Get some flour in a big bowl. Season the flour with salt and pepper.
Mix the meat with the flour and coat it then remove the pieces.
Heat some oil in a pan and fry off the meat. Probably 2 batches for a pack that size. You want to get the meat really browned with little crispy bits of flour.
Tip the meat into your slow cooker.
Deglaze the pan with some quality beef stock/or red wine.(like a full bottle) or 1 litre stock.
Scrape all the bits from the pan and if using wine then reduce it by a third.
Tip this into the slow cooker cooker too.
Use some butter or oil and sauté some diced carrots, onions and a stick of celery. Sweat them off then add to the slow cooker.
There should be enough liquid to cover everything. Add thyme, pepper and garlic and let cook for 3/4 hours. Peel some potatoes and add them for the last hour.
Season to taste.

The problem with stews is how long they take to prepare. Most weeknight meals are best prepared quickly. So if I eat stew during the week, I'll plan ahead and make it on Sunday and reheat it. Also, don't use a slow cooker. Just use a regular pot or pan and be sure to get some good color on the meat before you build the stew.
