Complexity of taste is more important than palatability beyond a certain point. As a child I loved mac 'n' cheese, but nowadays it's such a simple flavor to me that it just tastes like boring goop. In order to still enjoy mac 'n' cheese, I gotta fuck it up with onions, grilled-tomatoes, italian sausage, olive oil & herb drizzles, tons of seasonings, breadcrumbs, weird cheeses, and all sorts of other gimmicks. As time goes on, you get bored of basic flavors and want something more complex. Craft beer offers some incredibly complex flavors (especially when you start fucking with brettanomyces) that you won't find in most other foods. In some cases, it tastes horrendously bad, but you're so intrigued you wanna keep sippin. It starts to become somewhat of a food science when you get into the brewing process too.

TL;DR: all craft beer tastes like shit but it's got complexity you won't find elsewhere. some people value complexity over palatability, like choosing roquefort over sharp cheddar.

People meme a lot on the craft beer scene for bizarre, sweet, experimental bullshit because that's where the industry has landed for now. BeerAdvocate pushed the whole "extreme beer" narrative years ago which certainly didn't help the issue.

There are a lot of long-established "craft" breweries out there that aren't doing anything weird. Anchor, Sierra Nevada and Anderson Valley are all plentiful and super fresh where I live and give me a lot of variety between special releases, seasonals and year-round offerings. These days I don't get out of "standard" beer styles anymore. I've been done with the "beer scene" since 2015.
