Potatoes are used so often in European cuisine that I think this "unitasker" is entirely justified. That said I usually just buy instant mashed potatoes. I watched a docu about how they are made once, nothing unhealthy or offputting about it. Just boiling, mashing and drying spread over huge, heated rotating cylinders.
