I like to do a rare steak, let it rest for 2 minutes, cut it in slices, then it goes back in the pan with a dollop of butter and a crushed garlic clove for 1 minute, then i let it rest for another 3-4 minutes
The result is sorta medium, but better than any other steak I ever eaten. Also, it absorbs all the butter, so it's moist and still tender, and not chewy like the abomination blue rare steak faggots eat to look cool in front of other reddit faggots.

Which is delicious to me. I like to heat up to body temperature and have the outside seared for maximum flavor. That's the beauty of steak cuts of beef. Raw or almost raw is perfectly safe. Some people just like it that way. You could ask the same question about sashimi.
