What are some generally popular foods that you just don't care for or feel are overrated.

For me it is French macarones. I just don't care for them. I find them too sweet and don't really liek the texture

Cilantro/coriander. Why do fuckheads add it to everything? What's wrong with parsley, which noone is genetically predisposed to hate?

Then there's the people who cook shitty meals that look like they've been pulled out of the sewer with the plastic bag, but they put that green shit on top so that they can make it look "fancy" when the only effort was in washing the cilantro/coriander to put on top.

I can respect a meal that has it as an important ingredient, but fuck the people who put it in for no good reason, knowing full well that it ruins the entire dish for a lot of people.

You should look for an Italian bakery still staffed by real Italians if you can find one where you live. Chocolate-dipped is superior. If it doesn't have pistachios on the end, you're looking in the wrong place. The chocolate chips aren't a good sign. I've had a lot of shitty cannoli from non-Italian bakeries that are otherwise decent, so I understand where you are coming from.

I've gone to Kevin's Noodle House (I think it's a chain) several times now and only once got regular pho. They have something more like a stew with red broth and it's much more rich. Either way I'd dump chili oil and vinegar into it and that usually helps the flavor.

Macarons are extremely cheap to make ingredient wise (poverty tier baking, generally) but are rather daunting to make. Making one or two flavors yourself isn't that bad, but try making a dozen. Not that anon, but add chipotle pepper(seasoning) or use chilies in a adobo sauce. It's almost like a barbacoa.
When i season my pork for smoking, the bark i use is
Thick black pepper
Garlic salt
Onion powder
Barbeque rub
Chipotle paste/ juice
Chipotle dried pepper seasoning
Jamaican or carribean jerk seasoning
Smoked paprika
Slather the thing in it, and smoke it in hickory wood
I only put a tiny amount of bbq on it when it's done, the rub has enough flavor.

It's insanely difficult. I bake often and it's one of the most difficult things I've done and I've fucked it up several times. Croissants I just don't enjoy but I do recall having to fold them like a hundred times. The pricing of macarons is mostly because they're a fad (they sell them at Disneyland now) and that they're unapproachable to 90% of the population. That said the $3.50 I paid per macaron from Laduree was genuinely worth it and I'd gladly go again.

Pho is my favourite dish is all the world, that I've discovered so far. But I've tasted a lot of pho I didn't like. Bland, insipid, unbalanced, too sugary....

Maybe you did not have a good experience? There's a lot of variety, some of it is the real authentic stuff, but many places sell shit tier pho, or label "pho" something that's not worthy of the name.

Also there is northern and and southern Vietnam style pho, witch many important differences. Maybe one of the two would suit your tastes better.
