Also you know what really fucking annoys me? Whenever I see an American using something that they refer to as cheddar, it literally NEVER looks like real fucking cheddar.

Binging with Babish is one example, but it seems to be the same across America. Their "cheddar" does not look like real fucking cheddar. It looks like double gloucester, it's all orange and shit. But I doubt it tastes like double gloucester - it's probably just some plasticky artificial crap like other "American cheese" is.

No, no it isn't. In fact when looking it up, it looks like Americans add annatto to Cheddar, to make it orange. In Britain (WHERE CHEDDAR IS FROM, IT'S NAMED AFTER A PLACE CALLED CHEDDAR IN SOMERSET), we don't add annatto to Cheddar.

But annatto IS added to Red Leicester (pic related). Whereas Double Gloucester, which is less red than Red Leicester but still more orangey than Cheddar, apparently gets its colour from some flower.

I ate "Queso de Tetilla" once, my uncle bought it, it was melted on the inside, and if I'm not mistaken, that's not usual, as in it must have been a special kind. Pecorino (e.g. Pecorino Romano)
Mozzarella (genuine Mozzarella is again much superior to many inferior imitations that are sold in the US - although even in Europe, inferior forms of Mozzrella, like hardened / grated Mozzarella coated in potato starch, is sold. Really you want the fresh balls of Mozzarella that come soaked in water, in a plastic bag.)
Ricotta

I'm sure many of Europe's other cheeses are also fantastic, but there are so many I've never tried.
