Is pork the most low tier meat out of the big 3?
Chicken is super versatile and is kinda hard to go wrong with, even just mild seasonings.
Beef tastes really good on its own (even the cheap cuts) and doesn't need much seasoning (but also goes very well with heavier seasonings).
Yes there are great pork dishes, but it seems like they mostly depend on masking the porky flavor to some extent.
Chinese drown it in sugar and sodium
Mexicans drown it in seasonings and capsicum
Portal Ricans drown it in sodium
Americans smoke it for hours on end
Italians and Germans cure it
Bacon is pretty good on its own of course, but it's best as an accompaniment, as opposed to eating a big plate of bacon.
The best part of pork is the ribs, which seem to genuinely have a good flavor. But still need more seasoning than say, beef ribs.
I don't get why Wongs and Juans eat so much of this stuff

the version I like the most has battered fish which soaks up all that gooey broth
lots and lots of minced raw garlic and vinegar to cut through any heaviness you might get with the broth
top with chopped chillies

if you are talking about pure china china dishes I like Lei Cha (aka thunder tea rice- a hakka dish) as well, its rice and various chopped veggies in a herbal pesto-esque soup
