I left some stew inside a sealed pressure cooker for like a month (sudden trip for personal reasons) and when i came back to it and opened it it had this hard fungi all over the place
Cleaned it as much as i could but there's some stains and black deposits at the bottom of the pan i can't scrub off no matter how hard i try
Already tried lemon, hot water and vinegar. I'm boiling water with baking soda in it as we speak and hoping that allows me to scrub that shit off

Is this pot fucked? Will i have to throw it away?

Soak it in hot washing soda, or use scotchbrite. That shit probably won't come off without harsh chemicals or elbow grease + time.

If you don't have washing soda, you can bake some baking soda in the oven and put it into the fucked pot after putting some water in the pot first.

First, you need to get the residue off. What is the interior made of? If steel, just use Barkeeper's Friend.

Once you have removed the reside, you need to sterilise. I'd soak it in bleach first, then boil water in it. You'll need to rinse it repeatedly to make sure there aren't any cleaning chemicals left.
