This isn't even, like, a good egg curry. There are many regional variants and this one looks kinda crap. Try my regional version too
>Beat together eggs, cilantro, fenugreek, and salt (should be well incorporated but not frothy)
>Fry diced onions on medium high with salt in a good glug of sunflower oil in a frying pan until golden brown
>>They should be just about swimming in oil - trust me, you need that for lubricant
>Add thinly sliced chillies (however many you think will be enough, double it) and fry until aromatic
>Add bassar (if you can buy it or have the energy to make it) and cumin seeds to the onions - fry briefly and do not allow to burn (should just begin to smell aromatic after a few seconds, but will smell sharp and stinging when burnt)
>>Sub cayenne powder and turmeric, and add a dash of indian mustard oil if you can't
>Quickly add the egg mixture to the pan and turn heat to medium/medium-low. Mix quickly to incorporate all ingredients but stop when the egg starts to solidify
>Allow the egg to cook on the bottom - lift up the sides to allow the raw mix on top to leak below the egg pancake and cook on the frying pan's surface
>When mostly solid, flip and cook on the other side
>Finish with a sprinkle of garam masala
