i do think joshua is a good cook and his recipes are interesting, but watching his videos is a chore because i have to skip the parts with his face in them.

I've followed a few of his recipes (pic related) and I think he's pretty alright. He's got that 'Youtube chef' vibe about him but its not nearly as bad as babish or adam. Forced humour but good recipes. Plus he actually lists his ingredients in the description, which is a plus.

He just follows other recipes and doesn't really know what he's doing. Per example in his gravlax video he adds pink salt. Pink salt is used to prevent bacterial growth when meat is left at room temperature for extended periods of time. In his video he used a smoke gun and replaced the salmon in the fridge immediately obviating the need for pink salt. He read some recipe that said cold smoked salmon had pink salt without trying to find out why.

long term cold smoking would require curing salt. If you use a smoke house or a smoker. Putting a tray on your counter for 20 minutes then putting it back the fridge is fine without curing salt.
