I bought 75 lbs of taters for a screaming deal. I'm looking for ways you folks preserve / use potatoes long term.

For my first batch I'm gonna dehydrate them in slices. Peeling the potatoes for this batch to see the peel on peel off comparison.

Store in a cool dark place. Ive heard of drying potatoes for long term storage but never tried it. Ive eaten potatos after 2 months of storage, just peel and make sure to cut out all of the eyes. Periodically check for rotten ones, because one gone rotten will speed up the decay of the rest of them.

Where the fuck did you buy 75 pounds of potatos from?

Thanks for that. I live top floor on an apartment so it gets warm, I have to can or dehydrate them all some how. And with this hookup I can be the potato king if I learn to preserve them well. I found a guy on my spouse's varage sale hahaha. Saskatchewan of course.

Well this is probably a moot point since it takes a lot of space but you can also pickle potatoes and they will last basically forever. The biggest downside is that now whatever you make with them will taste like pickle.

You don't need to preserve them, just make they're kept in a cool (and more importantly, dark) place and they'll keep good, or at least edible, for months.

You need to ensure no light is getting on them at all, so cover the sacks with a few old sheets or something to block it out and stop them from sprouting. They may start to go a bit wrinkly after 3-4 months but as long as they don't go green they're fine to eat.
