White potatoes should be peeled since about 3/4 of the toxic alkaloids are in the peel. But also most of the nutrients. Lets call the whole thing off and eat sweet potatoes instead. Why doesn't the U.S grow more of the Japanese varieties? Are they too unfamiliar to U.S. consumers or do they not grow well here? The Hmong dudes I buy some from seem to have no difficulty.
