You may not notice, while our cuisine takes a lot of notes from others, the people of viet knew the ingredients really well and even improved many dishes. Anyway, bun bo hue is good, nice broth etc.. dont like the rice vermicelli though, a lot of times it gave me mild acidic aftertaste. would rather put cellophane noodles or akaline noodles instead, or fried tofu, lots.
