I worked at a Yelp "influencer" event and a few of the actual pro food photographers were cool but the vast majority of people were very open about not really eating the stuff they post or at most having a few bites and just kept introducing themselves by their handle instead of their name.

Voodoo Doughnut is probably the most widely famous hipster/gourmet donut place and it opened 17 fucking years ago. It wasn't the first donut place to make weird flavors, either. I live in a pretty rural unincorporated town and we recently got a hipster pop-up bakery that only sells on fridays, saturdays and sundays. They charge $8 for a single cupcake, and $12 for a fancy cupcake (and by fancy I mean they crumble oreos and cereal on a regular cupcake). My area is mostly retired seniors with limited budget and this pop up loves to blame the community for not buying into its bullshit and driving them to increase the already insane prices.

Nope unless you count the time I got a coffee and cake with a aunt and we talked for about 40minutes.
The table next to us had 5 girls all with basically pic relate on the table with whole cakes and donuts stacked on the glass.
They took lots of photos.
When they left non of them ate more than a few pieces or finished the drink.

Any ethnic food trend will have already been available in areas that have a significant population of said ethnicity. Any food trend capable of being easily adopted in areas that already support those kinds of business will be quickly adopted. The only food trends that spread slow are ones that are based on ingredients or equipment not readily available. And lets face it, most food trends like fancy cupcakes or hipster donuts are basically nothing more than repackaged carnival food being sold to the kind of people who have scoffed and turned their nose up at a donut covered in kid's breakfast cereal if it were being sold at the Minnesota State Fair.
