Not OP but I save carcasses of roast chickens and then use it to make stock. Then the final roast chicken I use the meat from that and use it in the chicken soup. Sometimes with noodles.

My mom always cooks chicken by boiling it, it wound up making boiled chicken my favourite way to have chicken. Just toss the whole thing into a pot with some onion and whatever spices, turns out perfect (but the only person who'll eat it is me).

Roast and baked chicken can gtfo.
