I also like to make something similar but with red potatoes. It goes well with grilled/bbq meats. Place a few tbsps of butter in the skillet, throw a layer of sliced onion. Layer of red potatoes with salt/pepper/heavy dose fo smoked paprika. Continue with a layer of onion and potatoes until you run out. Cover and let it cook on medium until the potatoes get a bit soft. Gently stir (or don't if you can't stand having the layers out of order) put a layer of cheddar cheese on top and in the middle if you want it really cheesy.
