When I don't have a day to cold glutenize a ball and hand toss it, I just use a pita.

I just use half as much sugar and I've never tried with honey.
Also, I like to mix spices in as i knead the dough later. Rosemary, oregano, pepper... grind it in a mortar...
Shit now I wanna make more.

Make sure you use 4 pepper blend if you're using pepper. McCormicks makes one with Black, Green, Rose and White pepper. It's fucking delicious. Regardless, that sounds great.

Oh yeah, mixed blend without question.
I don't even remember the last time I used plain black, other when making bloody marys.
I use Kotanyi tho. That's pretty much the best you can get here.
