The "manliness" comes from the important nutrition that men especially need in their diet which they get from meat. Vegetarians and vegans can compensate and get what they need and still retain their strength, but the problem is how many don't understand how to properly approach their diet, and end up looking emaciated in the process.
Tons of ignorant vegans and vegetarians eat way too many greens, because they retained this mindset that greens = healthy; meat = excess. But lettuce, celery, and carrots are not sufficient for your diet. Those things may be great to eat, but for some reason, people think in these reductive terms that somehow you should be eating salad as a replacement for everything.
