I was curious so I watched one of his videos, the one about croissants. Not once did he show a cross-section of the finished product. This has led me to believe that he is a hack and a fraud. There are only two reasons you would make a video about croissants and not have a cross-section to show your work:
1. he forgot because he's retarded, or
2. his technique sucks so he ended up a bready crumb structure and was ashamed to show it, but had to upload the video anyway for those sweet adbucks, hoping the plebs wouldn't know any better.
