Indians have amazing food, It's just very heavy and has a ton of ingredients which don't appeal to the Western palette.

It's very complex to cook if you want the real deal, you need a lot of spices, herbs and the right ingredients.

They're not slop, it's just a stew like dish. It's almost always served with rice or at least bread which you eat it with.
It's just a different form of culture and a way of eating. Even in Europe you find lots of stew based dishes that you serve with rice, pasta or potatoes or eat up with bread.

I like to add green beans like the ones that sea lion is eating to my rice. Don't boil them as long as the rice, though. Just add them at the very end to heat them up a bit.
I also like adding whole rawit chilies to my rice for some heat, also at the very end of the cooking process. Adding them whole or halved lets you choose easily when you want the heat and when you want since you can easily eat around them.
Julienned carrots are nice for this too to add some crunch.

Tl;dr think about adding filler to the rice rather than to the curry.
