You cant eyeball temp anon. Gotta keep your hand in the pan until optimal temp is reached. Then turn burner off.

If you're making something a little finicky like stir-fry, pancakes, or eggs that's always too hot do what I've seen in some Japanese videos and get the pan really hot (or oil to just wisps of smoke) then take the pan and set it on top of a soaked tea towel until the SSSSSSSSSSSSSssssss-sound stops to and put your ingredients in and return it the heat.

Heat your oil in the pan, once it starts smoking, drop a few icecubes in the pan to get it to perfect temperature every time. So easy.

Good pots cause a lot of inconsistency in cooking because they retain heat and don't cool down quickly. Be sure to pre-heat, and at a much lower temp than you anticipate needing. I usually fry eggs at 4/10, for example.

I was considering posting this. Another option is to flick some water onto the pan. You can tell by how it sizzles about how hot the pan is. Might take some practice to get a feel for it. But that won't stop the problem of you over-heating since it will continue to heat up if its set too high. See point 1.
