I converted a min fridge to a cheeze cave with a temperature controller. I've been following Gavin Weber (youtube) recipes to fill it. Want it full so i am eating old cheeze and replacing it. Mad some cheddar, parmesan, blue and am trying brie which hasn't bloomed yet. Havent tried any of it yet.

My first instinct was to choose Bulgarian feta, but I have come to the conclusion that Danablu is the optimal choice for me. Deep flavor that I can still appreciate by itself, use in various dishes of my choice, and so on. Not too expensive near me either, especially if it goes on sale. I recommend both of these cheeses to everyone in this thread, though.

Haven’t tried it yet, but it sure looks like a blue I would enjoy. Pic related is a plate I took to a NYE party. starting at 12:00 position is St. Angel triple cream, Point Reyes blue, Humboldt Fog, Cambozola, Sottocenere, and English cheddar. The plastic container bottom right is my tomato balsamic jam, which is one of my favorite accoutrements for any cheese plate.
