Vegetable refers to non reproductive parts of the plant (vegetative human makes more sense after learning this). Potatos are a swollen portion of stem, lettuce is just leaves, etc. Fruits are specifically parts involved directly in sexual reproduction.

Corn syrup is not sugar extracted from sweet corn. It's made by splitting starch from hard corn, previously with pressure cookers and acid, now with a microbial/enzymatic process. The same can be done with potatoes or any starch. It's how faux-healthy brown rice syrup is made.

Corn syrup contains no fructose, the glucose in it is processed into fructose with a semi-permiable memebrane or enzymes. Overall it turns into a 55:45 ratio of fructose to glucose, similar to cane sugar at 50:50 or so.
Go buy some Karo brand corn syrup at the store (or equivalent shelf brand) if you don't believe me.
