What do you like to make on your day off? I usual make some Pasta Puttanesca. Anchovies and garlic to start. And rigatoni noodles.
So good.

Why? use mop noodles you fool.

I like to cook a decent breakfast. I wake up at 4:30AM for work and I don't eat until basically 9:30... So a good breakfast is what I crave on a sat or sunday morning.

Tomato soup with white beans, carrots, green lemon lenses and almond butter. With a loaf of farm bread.

ingredients

2 onions, yellow, peeled and finely chopped
3 garlic cloves, finely chopped
3 carrots, chopped
2 tablespoons olive oil
2 teaspoons thyme, dried
2 jars of crushed tomatoes, 400 g
10 dl water
2 vegetable broth cubes
2 tbsp almond butter
2 jars of white beans, of 400 g
salt and black pepper
lemon Lentils
2 dl green lentils, cooked
1 lemon, grated peel and juice
2 teaspoons of olive oil
salt and black pepper

Do this

Fry the yellow onion, garlic and carrots in the olive oil until the onion softens and becomes easily transparent.
Pour in the thyme, crushed tomatoes, water, broth cubes, almond butter and rinsed white beans. Cook and simmer for 10 minutes or until the carrots are tender.
Mix the soup smoothly with a hand blender. Season with salt and pepper.
Rinse the lentils and mix with lemon zest, lemon juice, olive oil, salt and pepper.
Pour the soup into bowls and top with the lemon lentils.
