If you start adding assloads of cream and butter or fry them them you end up with a higher calorie food that you eat less of, which is fine except people can't control themselves. If you bake or boil them then they're pure potato and have lots of great nutrients without being ridiculous calorie bombs. It always comes down to portion control, but people understandably consume way more than they should when the food is abundantly available.

I bulk buy my potatoes. Usually 200-300 lbs before winter. I could grow them but its so cheap, might as well buy and grow expensive stuff.
I can probably 100 jars. Usually 20 half gallon jars. 20 lb bags of more expensive and usually tastier varieties. Mostly used in soups and casseroles.
Boiled potatoes skin and all are good for you.

They are acceptable, yet plain food on their own, with minimal additions.
Its almost impossible to resist the urge to load them up with fats, cheese, dairy and shit, because the more you add, the better it gets. A plain potato with salt is a D, butter and spices brings it up to a C, more butter, spices and sour cream its a B, and loaded with cheese, bacon, sour cream, and fats its an A.
They are NOT filling, that's the problem. I have eaten 4 pounds in a sitting.
