I find personally I get that sort of feeling from it or other macaroni / noodle based zero effort meals when I've been eating them too much and haven't bothered going out and eating at a restaurant for meat dishes or stocking my own place with meat. It's like after a while my body can tell I'm kind of trying to pull one over on it and not really feeding it real food.
Also if you got spam or corned beef you can mix some of that in with your easy mac or instant noodles it'll give it a little more substance.

Far from the weirdest thing I've seen done with mac and cheese (actual weirdest thing being that time some anon posted that retarded youtube amateur / homecook / expert show's episode for mac and cheese and instead of the 'expert' version being a better done variety of the same dish they just took regular mac and cheese and dumped a giant pile of graham crackers and bacon on top of it).

I doubt that sharp cheddar is really going to be very similar to using a hot sauce. I get that doing this will add a bite to it that you might consider somewhat comparable to the sting of capsaicin, but each will really have its own pretty radically different qualities to it and I wouldn't say either one is a substitute for the other.
Also don't know what you mean by "unnecessary" acidity. Why would it be necessary vs. unnecessary in the first place? Because there's already an acidic component it's one case I could think of where adding another might be called "unnecessary" in the sense where it's redundant, although even then I don't think that's right because it assumes what you're adding is providing acidity and nothing except that.

If it really does taste like cardboard, it might be old and spoiled. Items stored/shipped in cardboard will eventually taste like it, under conditions of moisture, heat, and age. It could be the store you get it out and the conditions there. You could try another brand. The powdery packet kinds will taste better than the "creamy" cheese pouch kinds. This is because your own dairy milk and butter add the really good flavors to boxed mac n cheese.
You can make your own one pot style of mac n cheese cooking the elbow rigate in milk and butter, and your own shredded cheese to finish. I like to start with a half an onion in the butter for flavor. Add-ins can be a pinch of cayenne, mustard powder, pepper, and these are to add some of the bite you'd get in more aged cheddars. If you are not going to bake your mac n cheese, you can still get the crunch of a nicely browned top by toasting some homemade coarse breadcrumbs in a nonstick, and using it as a crumb toppping for texture and flavor. Garlic, parm, and herbs can go into your topping, if desired.
