you will get better with time, and you'll learn ways to streamline your process bit by bit, here and there. But the main key to being quick is to make sure no matter what there is always something in the machine, at all times. the less down time you have with that machine not cleaning anything the better. always be aware of the noise the sanitizer makes, and whenever you don't hear it going, instead of finishing those bowls or whatever before you put a new dish rack in, put something else in there while you work on your main washing, like a cup rack, or sheet trays. this means you're not only working on dishes from the service, but the prep stuff and kitchen tools you usually have to do close to the end of the night. um, learn how to fuckin CRAM those dish racks, the less loads you have to run the faster you'll be. don't concern yourself too much with your coworkers, they're all miserable folks with dealers choice of addiction. just keep it up and make your money man

Remember you are dealing with an industrial dishwasher and it should be doing nearly all the work. You should only be roughly scraping large amounts of food or thick bones in the trash (depending on if you want to test the limits of the industrial garbage disposal) and then loading it to the limit of where it will still clean everything.

Nope. AFAIK all trades are like that but definitely mechanics. If you don't know what flat rate is, we're only paid for what we do not for time. Bad salesmen basically fuck our paycheck, lower techs that work hourly are supposed to do most shop maintenance like sweep and shit, get a lazy one, fuck that guy. Slow techs fuck us too, if I could count the times someone screamed at me for taking too long with a tool in the shop like the alignment rack the numbered be insane. Plus techs are generally angry people to start. So every day is basically a war zone. Not to mention when a guy fucks up a job and you have to go and help fix it. Had to fix a lower techs brake job the other day, put the pads on backward and fucked the rotor up. Replacing those rotors? 5 hour job. Guess what I got paid for it. Personally my dad trained me at his own shop to run my own, that's my end goal when I'm old beaten broken and not worried about my biceps lookin good because I won't have to do so much to keep the same lifestyle, and as retirement kicks in I'll pole barn up and work for close buddy's for extra cash and something to keep doing in retirement as I also spend time with my own projects.
My future feels pretty comfy, and possible with a lot of trades.
Not to mention it seems people are starting to notice the big mechanic chains ain't so good. Might be more lucrative

It might be you or it might be them, at my work if we run out of something consistently we get more of it because they know I'm pretty consistent and good at keeping the kitchen stocked up. It might be that they don't have enough stuff, or that there should be someone helping you put stuff away, or that the kitchen leaves you with a huge pile of crap from prepping for the day when they should be cleaning as they go. If you're new you'll get faster and find more efficient things to do things.
